This meat-centric exemplar of Portland's cutting-edge culinary scene is the domain of James Beard Award–winning chef-owner Naomi Pomeroy, who oversees a six-course prix-fixe dinner (and three-course brunch on Sunday) that changes weekly, depending on the meat at the market. Most dishes are prepared right before your eyes in the open kitchen: there might be an ahi crudo with smoked pine nuts and pickled ginger, or Wagyu coulotte with pink peppercorn–cognac sauce.
